A Puerto Vallarta tradition, the annual Festival Gourmet International Vallarta features renowned international chefs who come to share their best recipes with talented chefs from some of the finest restaurants around Banderas Bay. And at Daiquiri Dick's Restaurant, the kitchen is alive with activity during the Festival Gourmet. This year, their guest chef is David Gurewitz from Lark Restaurant in Seattle - and he's no stranger to the kitchen. "I have liked to cook for as long as I can remember," says David, "I started off cutting up vegetables or frying eggs, and being in the kitchen when my mom was cooking always seemed fascinating." "I came down with a list of menu items planned and once I got here, basically, threw the entire menu out the window," says David, "I then started from scratch using what was available or what looked good. The fresh produce at this time of year is amazing." He is an adamant believer in using only fresh, local ingredients, which are in season. Plus, there's respect for the product and a deep appreciation for the region, and this is the first time he is sharing his talents in Mexico. "I guess I was just trying to feed off of the enthusiasm of other people, or at least that's the kind of way I have always been and my own sensibilities have always been changing and being updated as I get older, as I experience more, as I go to different places," says David. David's culinary travels include Minneapolis, New York City, where he attended the Culinary Institute of America, Hong Kong and Paris.
